White rice flour can be used interchangeably with brown rice flour. Rice is a staple food in Asia where, unlike most grains, it is grown in small fields and harvested by hand, as it has been for centuries. White rice flour is lighter, softer and easier to digest than wheat flour. Some people find rice flour slightly gritty, but many find it preferable to bean flour.
Rice flour is naturally gluten-free, high in carbohydrates and low in fat and can be used for baking cakes, cookies, dumplings, breads and more, as well as thickening sauces and coating fish and other proteins.
