Chickpea flour has a formidable wealth of nutrients, proteins, starches, lipids (much more than in legumes), especially oleic and linoleic acids, and is low in cholesterol. It is also a good source of fiber and calories and a good source of iron. Chickpea flour is very popular in Middle Eastern and Indian cuisine used in dishes such as falafel, hummus, socca, farinata, papadums and pakoras. It is also a wonderful ingredient for gluten-free baking.
Chickpea Flour also works well in cakes or quick breads with strong flavors like chocolate and pumpkin. This flour can be used to thicken soups and sauces, it can replace up to 25% of the flour in your cooking to increase protein and fiber.
