The main product of sesame is its seeds, which have high nutritional value due to significant amounts of vitamins, especially A, B1, B2, E; various minerals and trace elements, such as calcium, phosphorus, iron, magnesium, potassium, zinc, sodium, selenium, copper and chromium; and mucilages, which give sesame a mild laxative action.
Lecithin is a powerful emulsifier which facilitates the dissolution of fats in aqueous media. One of its functions in the blood is to keep lipids, especially cholesterol, dissolved, thus preventing it from being deposited on artery walls. Sesame is, like soy, one of the richest in lecithin.
