Being gluten-free, more and more people are looking to tapioca flour as a substitute for the flour used in white bread.
Tapioca flour is a flour extracted from cassava which, when combined with water, forms a gum. This, when brought to the boil, then turns into a very light, white pancake-like batter. Rich in simple carbohydrates, if not combined with a diet rich in fiber, tapioca flour will cause insulin spikes, caused by the very rapid release of sugar into the blood.
