Basically, passion fruit peel is rich in pectin, a soluble fiber fraction capable of binding to water and forming high viscosity compounds, giving it peculiar physiological effects. Fiber hydration occurs by water adsorption to its surface or by incorporation into the macromolecular interstitium. A gelatinous layer is formed on the intestinal mucosa, which alters the diffusion and absorption of nutrients.
