Eggplant flour is produced with whole selected fruits, including their peel that are dehydrated and ground. In addition to being nutritious, it is rich in fiber that helps in good intestinal functioning.
A study was carried out by the Josué de Castro Nutrition Institute of the Faculty of Medicine of the Federal University of Rio de Janeiro (UFRJ) on eggplant flour which pointed out that it helps to eliminate abdominal fat. It is recommended to drink plenty of water, so that the effect is not the opposite. It naturally contains in its composition the minerals: calcium, iron, phosphorus, manganese, magnesium and potassium.
