Traditional brown sugar is extracted directly from sugar cane juice, popularly known as dark/brown sugar and smells like rapadura. It has a more pronounced flavor due to the molasses it has.
It is a raw sugar that does not go through an industrial process (chemical refinement), because the darker the sugar the more nutrients and vitamins it has, and the brown is considered the richest in nutrients and vitamins, having calcium, magnesium, phosphorus and potassium.
